Rhubarb Mandarin Pavlovas with Pistachio Dukkah
a lil spring time dessert I whipped up this weekend.
Was going to a friend’s dinner party and decided to throw together a little dessert to bring. I love using pavlova’s a vehicle for funky flavor combinations and fresh fruit, so shout out to all of my paid subscribers this one’s for you!

Rhubarb is now in season and it’s not something that I grew up eating, but I love the fresh and sour flavor that it adds to balance out the sweet meringue and stabilized whip cream.
To add texture, and to use up a bunch of these pistachios I received in the mail, I whipped up a pistachio dukkah. Dukkah is a Middle Eastern blend of nuts, seeds, and spices. Below you’ll find my approximation of the blend I used but feel free to sub in nuts and spices with what you have in your pantry.
Now that I’ve written this out, I realize there are kind of a lot of components. But I swear, each one is easy to make. And it’s totally worth it. Promise!
