Galette Des Rois (French King's Cake)
Galettes like these are baked throughout France in Janurary, celebrating Epiphany. Traditionally, a small charm or 'feve' is hidden in the frangipane center.
I'm upset that of all pastries this one has to be seasonal because it is one of my all time favorites. It's essentially a croissant cake. A croissant cake that is part of the traditional pastry cannon!
